SUMMARY
O consumo de verduras tem um importante papel na alimentação da população, todavia também está veiculado com a transmissão de doenças infecciosas, pois a água utilizada na irrigação pode estar contaminada e o solo pode abrigar diversos microrganismos patogênicos. O presente estudo analisou amostras de alfaces orgânicas e não orgânicas para verificar a presença de Escherichia coli usando duas técnicas diferentes: método Colitag® se baseia na produção de fluorescência sob luz ultravioleta através de enzimas cromogênicas que são produzidas somente por estes coliformes e outra técnica utilizada foi o plaqueamento através da membrana filtrante no meio de cultura Ágar M-Endo, que consiste em filtrar a água de análise e reter as bactérias na membrana, para posterior introdução na placa de Petri em cultura Ágar M-Endo. Outro objetivo do trabalho, foi testar a eficiência da água sanitária na higienização das alfaces. Para a higienização, as amostras foram deixadas em solução de água sanitária por 20 minutos. Independentemente do método utilizado, em todas as amostras de alface sem higienização prévia foi constatada a presença do coliforme Escherichia coli, porém após a higienização todas as amostras se mostraram negativas para E. coli. Este estudo reafirma a importância da higienização de folhas usadas na alimentação, evitando assim infecções alimentares que podem ser potencialmente graves.COMPARATIVE ANALYSIS OF CONTAMINATION BY ESCHERICHIA COLI IN ORGANIC AND NON-ORGANIC LETTERSThe consumption of vegetables plays an important role in the population's diet, however it is also linked to the transmission of infectious diseases, as the water used for irrigation can be contaminated and the soil can house several pathogenic microorganisms. Another objective of the work was to test the efficiency of bleach in the cleaning of lettuces. For cleaning, as they were left in a bleach solution for 20 minutes. Regardless of the method used, the presence of the coliform Escherichia coli in all of them, such as lettuce without prior hygiene, was found, however, after cleaning all characteristics as being negative for the presence of E. coli. The present work reaffirms the importance of cleaning the leaves used in food, thus avoiding dietary changes that can be potentially serious.
